Before you can start using the mail extension, you’ll need to quit and restart Safari. After doing so, clicking email links will open a new compose window inside of Gmail directly in Safari.

To open that Safari link in a new tab, just tap on it with two fingers at once (as noted by a recent post on r/Apple).

Note that you can also touch and hold a link to invoke a contextual menu which includes the option to Open in New Window.
