If you store values and formulas in a Word form field, Word can apply a data type to the data rather than interpreting everything as normal text. Form fields can store static values and formulas.

Microsoft Word has a date field, but it's not easy to use in an expression. If you need to update dates in a document, use Excel to calculate the dates and then run a mail merge.
